Working at the intersection of the sociology of evaluative processes and immigration studies this talk interrogates how migrants come to lodge themselves in the quintessential food business in a megacity. At what cost and for what opportunities? What does that do to the established hierarchy of taste in New York City, and how do they transform it over time?
